Veggie Stuffed Peppers

4 peppers cut in half lengthwise (this is what we do with the peppers that are funny shaped or won’t stand up to be stuffed

1 Medium to large onion cut into chunks

Summer squashes zucchini, yellow summer, patty pan cut into chunks

Peppers cut into chucks

Tomatoes cut into chunks or cherry tomatoes

garlic & basil

Do a quick saute of all the chunked veggies in olive oil and sprinkle with basil. Spoon them into the pepper halves, place this in the over on 400 for about 15-20 minutes or until the veggie tenderness is to your liking. We like ours to still have a little crisp to them.

This is my grand daughters version of stuffed peppers. She was with me one day and came down to collect some un-sellable veggies because she was going to make me lunch, she was 10 at the time. She gathered what she could find went into the house and this is what she served. It was simply DELICIOUS a perfect lunch.
