Summer Squash Casserole

My favorite dish.

Medium size: zucchini, yellow summer and patty pan

2-3 tomatoes

1-2 peppers, I prefer green for this dish

1-2 onions

Parmesan cheese

Mozzarella cheese

Slice all the veggies and layer them in a large casserole or lasagna pan add just enough water to cover the bottom of the dish. As you layer add a little salt and pepper and parmesan. I typically layer from bottom to top with patty pan, zucchini, yellow summer, peppers and onions and top with the tomato. Sprinkle the top with parmesan cover with foil and place in a 350 degrees oven bake for 45 minutes then top with mozzarella cheese return to oven to melt the cheese and then it’s done.

If your grilling this dish place everything in a foil pan, including the mozzarella cheese, cover with foil and grill for 30 - 45 minutes, you just want the veggies to be fork tender.
