Rhubarb Bread

1 3/4 cups of flour

2/3 cups sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

1/2 cup vegetable oil

2 cups rhubarb, cut up

2 eggs beaten

Preheat oven to 350 degrees, Grease and flour a 9”x 5” loaf pan. In a large bowl, mix flour, baking powder, salt and baking soda. In a separate bowl mix eggs, sugar and vegetable oil then fold into dry ingredients and add the rhubarb. Pour into the loaf pan and bake for about 55 minutes or until a toothpick inserted in the middle comes out clean.

You can mix any other type of fruit in with the rhubarb if you like.
