Rhubarb pie

I always make this in a 10” deep dish pie plate.

2 pie crusts

1 cup of sugar

4 Tablespoons of flour

1 beaten egg

4 cups of chopped rhubarb

Cut the rhubarb like you would cut celery. Mix egg, sugar and flour then toss with the rhubarb. Dump into bottom crust, cover with top crust and bake at 400 degrees for 35 - 45 minutes.
