Patty Pan Pie

2 cups steamed & pureed patty pan - 2 large squash

2 eggs

1/4 cup half & half, milk or cream your preference

1/2 cup of sugar with 1 Tablespoon of flour mixed in it

1 teaspoon vanilla

1/2 teaspoon salt

1 9'“ pie crust un-cooked

Steam and puree the patty pan, you don’t have to peel it. It’s a summer squash and the skin is thin and edible. Mix all the ingredients in a blender or food processor and blend until mixed and smooth. Pour into the pie crust. You may sprinkle with cinnamon or nutmeg if you like. Bake in the middle of the oven at 350 degrees for 30 - 45 minutes. When a butter knife inserted in the middle comes out clean, it’s done. Can be served warm or cold.
